Happy Birthday Oreo

They've done it again! Now I'm a big fan of mint Oreos.Yes I LOVE THEM.  I could literally devour the entire box in a sitting, hence why I never buy them. So, the other day The husband and I walk into Walgreen's which we rarely do. I think we were picking up some pictures, when all of a sudden a sneak attack on my peripheral vision caused me to rapidly turn around and there in front of me was God's gift to human kind. BIRTHDAY CAKE OREOS.

 Literally this is a brain child of two of my favorite things, cake and Oreos. UGH! What is a girl to do?! I've been trying to be healthy but Oreos' only turns 100 once amiright?! So we buy a box. And yes, they were everything I expected and more. It was a literally party in my mouth. We also may or may not have bought another box in the recent past.

Sadly this one was the last at Walgreens and I fear that it may be the last for a very long while. If they do make a return I will not squander my new found addiction but rather indulge by creating birthday cake Oreo cupcakes and pie etc. Trust me, it will be blog worthy. Until then!

Cats

So yesterday, the Hubs and I are getting ready for bed. Now if you didnt already know, we have a cat. Our cat penny is not allowed in our room because I have pretty bad allergies and have no desire to wake up sneezing and puffy eyed. Anyway, our kitty has never been in our room before and she knows shes not supposed to because we are constantly having to fend her off from escaping through the door! Shes a crazy ninja cat too so I've been pretty positive she's going to try to weasle herself in any day now. So yesterday, the Hubs and I are getting ready for bed. We are sitting in bed chatting, when all of a sudden our crazy NINJA CAT tries to jump up on the bed! It scared me half to death! Anyway she didn't make it on the bed, and we swiftly threw her outside. Now you may think ohhh she's learned her lesson, NOT TRUE, she sat meowing like a crazy for thirty minutes and then tried to jump into our room again. She's such a crazy! but I love her. I think she feels left out but until she gets a good bath, she is not coming into our room.

Also I think she has a crush on my husband because while he's at work, instead of hanging out with me, she goes and lays among his clothes until he comes home. ha! She's in love!

Big girl Job

I started my first big girl job on Monday. I am officially a PSR worker (psycho social rehabilitation). I work with children and teens helping them to learn social skills and raise their self-esteem. Basically I'm pretty darn good at it and I think I'm really going to enjoy doing it for a while! Its fun to have something to do. It was getting really boring hanging out all day with my cat. I also started an ISAT proctering job at a middle school. So I get to do that a few hours every day for the next three weeks as well! The husband pointed out to me yesterday that I am officially an adult because I am working more now than I ever have in my entire life... I said "HEY I count school as a job!" so there! But he is right, this is the most I've ever worked in my life and it's a hard job! A lot of sad things happen in PSR because theres a lot of mental illness going on. Anyway, its a great place for me to be right now and I really am enjoying it so far! Wish me luck! We've got bills to pay for heavens sake!

What's on the dinner plate?-Vegetarian Chilli

Today i have done something that I have never done before! I have made chilli. And not just any chilli! Vegetarian chilli. They said it couldn't be done but I have conquered the chilli! As you can see by the absurd about of !!! I am extremely proud of myself. Also the hubs really like it so that's an added bonus.

Sweets (the husband) and I have been doing our best to embark on an adventure of epic proportions called health. We have chosen to do our best to eat a 60% raw food diet including green smoothies and many many fruits and veggies. Today-being Monday and all, we made vegetarian chilli.

Heres the recipe from Ezra Pound Cake

Vegetarian Chili

Adapted from Emeril Lagasse and Jessie Tirsch’s “Emeril’s New New Orleans Cooking”
Makes 6 to 8 servings
  • 2 tablespoons canola oil
  • 1 1/2 cups chopped yellow onions (about 3 small onions)
  • 1 cup chopped red bell peppers
  • 2 tablespoons minced garlic
  • 2 to 3 serrano peppers, stemmed, seeded and minced
  • 1 medium zucchini, stem ends trimmed and cut into small dice
  • 2 cups fresh or frozen corn kernels (about 3 ears)
  • 1 1/2 pounds portobello mushrooms (about 5 large), stemmed, wiped clean and cubed
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon cayenne
  • 4 large tomatoes, peeled, seeded and chopped
  • 3 cups cooked black beans (or 2 15-ounce cans of black beans), rinsed and drained
  • 1 (15-ounce) can tomato sauce
  • 1 cup vegetable stock or water
  • 1/4 cup chopped fresh cilantro leaves (do not add to the pot if you’re planning to freeze chili)
  • Optional additions: cooked brown rice, sour cream, Greek yogurt, diced avocado, chopped scallions
  1. In a large, heavy pot or Dutch oven, heat the oil over medium-high heat.
  2. Add the onions, bell peppers, garlic, and Serrano peppers, and cook, stirring, until soft, about 3 minutes.
  3. Add the zucchini, corn, and mushrooms, and cook, stirring, until the vegetables give off their liquid and start to brown around the edges, about 6 minutes.
  4. Add the chili powder, cumin, salt and cayenne, and cook, stirring, until fragrant, about 30 seconds.
  5. Stir in the tomatoes.
  6. Add the black beans, tomato sauce and vegetable stock, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, for about 20 minutes.
  7. Remove from the heat, and stir in the cilantro. Adjust the seasoning, to taste.
  8. To serve, place 1/4 cup of brown rice in the bottom of each bowl. Ladle the chili over the rice, and top with whatever garnishes you choose. Serve immediately.


Now here's how it went for the demiurgic household...

Chopping veggies takes a lifetime... be warned!!!

oh ok easy. Wait whats a dutch oven? uhhh. ok well we have a huge pot but lets use a skillet first. *insert annoyed husband here* sorry hubs! Thought it would work. Transfer to larger pot. aawhh much better.

2.Add the onions, bell peppers, garlic, and Serrano peppers, and cook, stirring, until soft, about 3 minutes.

 3. Add the zucchini, corn, and mushrooms, and cook, stirring, until the vegetables give off their liquid and start to brown around the edges, about 6 minutes.

side note-we used frozen corn and it worked just fine! Just throw it all in. While we were chopping these vegetables we learned how to successfully chop up mushrooms! These freaked the husband out but he De-weirded them. Who knew you had to scrape off the little hairy parts of the mushroom? Not me! But it's true, you do.  The whole time Hubs was making inappropriate comments like "I feel like this is an ear and I'm cleaning our its earwax..." lovely imagery.

4. Add the chili powder, cumin, salt and cayenne, and cook, stirring, until fragrant, about 30 seconds.

Oh hey! What up curry powder. Oh your not chilli powder and you need chilli powder for chilli? weird.
Anywayyyyy- Husband ran to the grocery store like superman. Ugh he's awesome. LOVE HIM.

5. Stir in the tomatoes.

*We BLANCHED. The husband was the one that brought it up. I didn't know how to peel tomatoes (pff who does!) so I was like weird what do I do. and the husband was like oh wait lets blanch it. I commended his efforts in using the word blanch in his every day vocabulary. (next time, we will be buying peeled tomatoes in a can. The blanching was probably not worth it.)



6. Add the black beans, tomato sauce and vegetable stock, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, for about 20 minutes.



What does it mean to truly boil? There were differing of opinions in this home. We decided to go for the bubble boil. It worked!

That's the end of the commentary. It was quite the meal and quite the process. AMAZING dinner tho and great amount of left overs too! I would say this is a perfect dinner for families and you can freeze them! It was great and our little family thoroughly enjoyed it. Our quest for health was a success for the day. Hope yours is going well too!

Whats on the plate?-Easter Sunday lunch

Along with my intents to educate religiously, I also want to talk about all the awesome food I've been making!!! Sister Syd ( the oldest sister) always asks about recipes and such (and I her) and we like to trade secrets. The only problem is that we don't have much time to chat and swap recipes. This way we can do so over cyber space! hurray. 

Here's whats on the plate for lunch!

Ingredients

  • 6 hard boiled eggs, chilled and peeled
  • 1-2 avocados cut into 1/2-inch pieces
  • 5 radishes, finely chopped
  • 1 green onion, finely chopped
  • 1-2 tablespoons low-fat mayonnaise
  • 1 tablespoon parsley, finely chopped
  • 2 tablespoons lemon juice
  • Zest of half a lemon
  • 1/4 teaspoon salt, to taste
  • 1/8 teaspoon ground black pepper, to taste

Directions

  1. Hard boil 6 eggs. Once cooled, peel them and separate the yolks from the whites. Dice the whites into small pieces.
  2. In a large bowl, combine the egg yolks, avocado and non-fat mayonnaise. Note: If you use 2 avocados, I suggest using only 1 tablespoon of mayo, and if you use 1 avocado, go with 2 tablespoons of mayo) and mash everything together with a fork or potato masher until combined and smooth (I like to leave mine slightly chunky).
  3. Mix in the lemon juice, zest, parsley, radishes, green onion and salt and pepper to the mixture. Taste and adjust the seasoning.
  4. Gently fold in the diced egg whites and combine.
  5. Chill until ready to use. Serve on sandwich bread or on lettuce leaves with your favorite veggies, if you’d like.

 Now some may say "ew gross, egg salad!" buuuut it was actually super good. I have never in my life cut up radishes or eaten them for that matter. They added a beautiful crunchiness to this super fresh and yummy meal. We just slapped some of this between two pieces of 12 grain bread and we were good to go! 

The second thing that ended up on the plate was a green smoothie. This is something that the hubs and I have been trying so that we can get back into shape and be healthier happier people! Today was a dairy day. 

1 banana
3/4 cup of milk
3/4 cup of Yogurt
1 cup of frozen berries (Medley!)
a packet of Chocolate flavored Green Pak (Our brand of green smoothie mix)
a chop of wheat grass
Mix it up with a blender! 
My dream is to one day get a blendtec but for now our blender works just fine! The consensus on this green smoothie was that it was pretty good but we aren't much into that amount of dairy and we like our berry flavored Green Pak much better than the chocolate. Oh well, you live and learn I guess.Off to take a beautiful walk with the sweets! Until next time...

Easter Sunday

Today is Easter Sunday. It is the one day out of the year when almost the entire world celebrates and recognizes the infinite sacrifice of our Savior, Jesus Christ. For those of you reading this whom may not know me, I am a proud member of The Church Of Jesus Christ Of Latter Day Saints. I believe that this gospel fully internalizes the love of Christ and so much more. I married my sweetheart in the LDS (Latter Day Saint) Temple because of the firm belief of eternal families that I have and have been taught through the Gospel. I believe the purpose of this life is to love and celebrate and learn from mistakes and hardships so that we can become more like Christ and our Heavenly Father. There is no doubt in my mind that I have been blessed with the life that I have because of the decisions and blessings of those that have come before me and I am ever grateful for them.

The greatest truth that comes from The Church of Jesus Christ of Latter Day Saints is that of the atonement of Christ. I believe that Christ took every hard ship, sadness, frustration and devastation upon himself so that we would never have to be alone. I am forever indebted to Him because of that. I have felt that power in my life. I also am forever grateful that after Christ hung and died in Gethsemane, He was resurrected so that He could live in glory with God again. I also know that I too will have this privilege because of Christ's resurrection. Jesus overcame death. He overcame life and He overcame death so that I can live in the knowledge that I have and will have joy. I don't care who you are because there is nothing better than this. There is no love greater than the love that Christ and our Father in Heaven have for us.

This video is a talk by Elder Holland of the twelve apostles. I don't think I've ever heard it put more eloquently and I hope that you can feel the truth of it.

The 1st DIY

OOOK! I am so proud of my DIY. This is what I did.
First I found some frames. Some from walmart, some from T.J. Maxx etc. all different sizes and such. I wanted some round frames but had zero luck in finding any.

2nd I bought some paint. My friend Barbara and I went to home depot and picked us up some red paint.

3rd-I spray painted. For the first time in my life I spray painted. It was very stressful!

4th- the picture frames dried.

5th- I bought some pictures to go into the frames. I like walgreens becuase they are quick and nice to work with.

6th- I reunited frames with glass and insides. This was not an easy process and took about 2 hours. If I were to do it again I would have gone through and numbered the glass and insides to the frames so that the chance of breaking glass and messing up the project all together would have been less. You can use painters tape (the blue tape from Walmart) to procure this process.

7th- I bought and swear by Command Brand picture hanging strips. I always get the velcro ones because you can buy them in (semi)bulk and they work really well. Slap a few of those on your picture frames! Do not take the seal off of one of the sides because you will need it for the next step.

8th-Arrange the frames the way that you want them on the floor! This will help when you actually start to put them on the wall. I also suggest taking a picture of the display so that you can follow it more closely when you are actually hanging them up.

9th-get your husband. At least that's what I did because I can not measure for anything. In my collage of frames, I wanted our silhouettes to be facing each other and to be equally spaced. The silhouettes come from http://www.simplysilhouettes.com/. She did a great job with these cake toppers and it was very easy and inexpensive on our part. Anyway, so my husband measured these and figured out all that stuff. Then we just started going at it, following our picture the whole way through.

This is a blog called demiurgic musings. This means musings of creativity and "coolness" as the theasaurus says. I just learned what demiurgic means! I mostly want to pin a picture of a cool DIY that I did. Basically the only DIY I've ever done! I am so proud of myself. A little about me, I just graduated college yesterday with a degree in Early Childhood/Special Education.  I am married to a real hunk! We will call him Mr. Demiurgic. (He's sexy, trust me.) I am 21 almost 22 in June! I love music and cooking and baking (especially baking) and now DIY.
